Potato is a vegetable that I guess everyone consumes and prefers in the nutritional menu. This Easy Homemade Potato Soup Recipe is a fast cooking and tasty recipe that you will like. This recipe is a combination of potatoes and peas, and together with spicy and herbs, you will enjoy a delicious plate in the family.
Ingredients for the spicy recipe- Four Servings
- 225g/8oz mealy potatoes
- 100g/3 1/2 oz frozen or fresh peas
- 1-large onion
- 2-tbsp olive or other vegetable oil
- 2-garlic cloves
- 1-tbsp garam masala
- 1-tbsp ground coriander
- 1-tbsp ground cumin
- 900 ml/3 3/4 cups vegetable stock
- 4-tbsp natural yogurt
- 1- red chilly chopped
- salt and black pepper
- chopped fresh coriander to garnish
Directions
- Prepare the vegetables for cooking. Dice the potatoes, chop the onion finely, and crush the garlic.
- In a large sauce, heat the oil, add the potatoes diced, onion, and garlic finely chopped, and cook for five minutes in low heat, until tender gently.
- Add the ground spices and cook for one minute to season.
- Add the vegetable stock, the chopped red chilly pepper and let the mixture to boil in low heat for 20 minutes until the potatoes break down.
- Add the peas and cook for the other 5-6 minutes. Stir the yogurt and season to taste.
- Transfer the hot soup into warm soup bowls, garnish with fresh coriander, and serve hot with warm bread.
Tips
- For an authentic Indian recipe, consume this plate with warm naan bread.
- If you prefer less heat, dressed the chilly pepper, before adding to the soup. Always wash your hands after it, and avoid touching your face and eyes, to not burn.
- If you don’t like spicy, you can avoid adding chilly pepper and other spicy to this soup. I have tried with Curcuma, and it is also delicious. I also replace the coriander with parsley, as for us, it is a more useful herb.
