This Easy Easter Bread Recipe cooked with Nettles is a much tasty recipe worth trying this Easter weekend.
It derives from Italian cuisine. Our Italian neighbors have a tradition of spending joyful time with friends and family during the Easter holidays, even on the Monday gathering with family or picnic with friends.
The recipe is delicious to taste with different cheeses, sausages, or bacon, typical of your picnic baskets.
I cooked it with nettles, which are fresh and can be found everywhere in this period of the year. You can choose to replace them with spinach or other wild cabbages.

Ingredients-26 cm baking cake pan
For the dough
- 500 g of all-purpose flour
- 7 g of dry yeast
- 2 tbsp of sugar
- 300 ml of warm water
- 60 ml of olive oil
- ½ tsp of salt
For the filling
- 300 g of nettles
- 250 g of unsalted cottage cheese or ricotta
- 1 egg
- 1-2 tbsp of grated Parmesan cheese
- salt, pepper
Directions
How to knead the dough
- We will sift the flour and mix it with the yeast and sugar well.
- In another bowl, mix the warm water, olive oil, and salt.
- We will knead the dough by adding the flour mixture piece by piece to the liquid mass. Knead it for a few minutes until the bread dough is elastic and soft.
- Shape it roundly and place it in a flourished bowl making a cross with a knife on the dough surface.
- Cover with cellophane and place at a temperature of 28-30 degrees until the dough doubles in volume.
Preparing the bread filling
- Meanwhile, we will prepare the bread filling. We will rinse well and finely chop the nettles. Transfer nettles to a pot, add a little salt and water and cook them until they tender properly. You can also add a little milk, as we do for other Nettles recipes.
- When the nettles cook, we will transfer them to a bowl. Add the egg, cottage cheese, and Parmesan cheese. Season with salt and pepper and mix well. If you like, you can add some other spices. I prefer to preserve the taste and aroma of nettles.
Bread Cooking
- Once the dough increased in volume, open the dough into a rectangular shape. We use baking paper to roll it easily after adding the bread filling.
- When the dough is a rectangular layer, we will add the prepared filling and open it evenly.
- We will collect the stuffed noodles with the help of baking paper.
- Meanwhile, prepare a cake pan with a hole in the middle, coat it with butter and sprinkle it with flour and place the collected bread rolls there.
- Let the bread rise for another 20-30 minutes and bake in the preheated oven at 180 degrees for 40-50 minutes.
- Remove the baking bread from the oven, let it cool well, and transfer it to a plate.
- Cut it into slices and serve with cheese, sausage, and bacon as desired.
