Pepper is one of the vegetables that we use daily in our Albanian culinary tradition, consuming raw in salads or baked, roasted, fried, boiled in various recipes. I like to share a simple, but tasty Cottage Cheese Stuffed Peppers. For this recipe, we can use green, yellow, or red peppers, in a long and narrow shape, not bell one.
Ingredients – 4 Servings
- 10- green or red peppers
- 150-200 g cottage cheese
- 50-100 g feta cheese
- 1-2 tbsp finely chopped parsley
- 1-tsp dry oregano
- 1-2 finely chopped garlic cloves
- 3-4 tbsp olive oil
- salt, pepper
Directions
- Preheat the oven at 180°C/350°F.
- Rinse the peppers, dry, and cut them on the top and clean by seeds and the internal membrane that keeps the seeds.
- In a bowl, prepare the fill for the stuffed peppers.
- Add the cottage cheese. I prefer unsalted cottage cheese. Add the crushed feta cheese, the herbs, garlic, olive oil, and mix.
- Grease a baking dish and start to stuff the pepper with the mixture helping by a spoon. Transfer the stuffed peppers in the baking dish, and bake them in the preheated oven for 15-20 minutes, until golden brown.
Let them cool, and transfer in a warm serving dish, and garnish with olive oil and chopped parsley. This plate can consume warm or room temperature, as an antipasto.
