This Chicken And Nuts recipe is a Porridge with Walnuts (Me Krisa), which consider as one of the most knows in traditional culinary of the city of Elbasan. These centuries-old recipe cooks with organic chicken, baked flour, and nuts, which flavors with crushed garlic for a unique taste.
The oven-baked cooking of it gives this recipe a delicious taste. It can serve at a family lunch or with friends. Years ago, it used to cook for the holidays and mainly in the autumn and winter season when it was much easier to find nuts.
As a derivative of this recipe, in daily, used to prepare a simple walnut-free porridge, but this is a traditional walnut porridge recipe that I encourage you to try and enjoy its taste.

Ingredients

  • one chicken  1.2-1.5 kg
  • 40 walnuts
  • 4 tbsp full of flour
  • 5-6 garlic cloves
  • 3-4 tbsp of olive oil
  • salt

Directions

  1. We will place the cleaned and cut chicken in pieces to cook in a pot of cold water and a little salt.
  2. After the chicken has boiled for about 20 minutes and released its juice, we will add the peeled and finely chopped nuts with a kitchen shredder or beaten in a wooden mortar. We will also add the olive oil to the pot.
  3. In a non-stick pan, we will add the flour and cook the flour without added fat until it turns golden and does not burn.
  4. In the pan where we have the flour, we will mix it with a glass of juice from the chicken broth until the flour dissolves and add it to the pot where we are boiling the chicken.
  5. We will also add the crushed garlic cloves and let it boil with the garlic for 2-3 minutes together. We season it with a little salt if it needs.
  6. We will place this mixture in a clay or glass casserole, first lining the chicken pieces and the porridge prepared with the nuts and flour.
  7. We will bake it in a preheated oven at 200 degrees for about 20 minutes until it creates a beautiful casserole crust, without thickening it too much.

  8. Serve it hot accompanied by hot or toasted cornbread.
