Cauliflower Flan Recipe

Cauliflower is one of the vegetables that we taste mostly during fall and winter, preparing delicious salads, first plates, oven recipes, etc. Today, we want to share a simple Cauliflower Flan Recipe, a quick and easy recipe that can prepare as a vegetarian recipe or not. This recipe is a combination of the cauliflower and potatoes, and other ingredients rich in proteins, like egg, cheese, and bacon, or ham, for those that want to use this one.

This recipe is a second vegetarian plate (without bacon or ham) and very tasty for lunch or dinner.

Ingredients

  • 600 g cauliflower
  • 600 g potatoes
  • 2-eggs
  • 200 g soft cheese in slices (Emmental, Scarmoza, Mozarella)
  • 50 g ground Parmigianino or Grana cheese
  • 100 g cooked bacon (facultative for those that are not vegetarian)
  • Salt
  • pepper
  • olive oil
  • 1 tbsp chopped fresh parsley.
  • Breadcrumbs

Directions

  1. We wash the potatoes well and put them in a pan, covered with cold water, and let them boil until to be soft to mash them.
  2. In another pan, we add the cauliflower that we have rinsed and cut in pieces, and let it boil for a few minutes in warm water until it is soft. If you can, it is better to steam it. Cauliflower Flan Recipe-Family Cooking Recipes
  3. We peel potatoes after that boiled and let cool for a while and mash them with a potatoes masher. Add the mashed potatoes in a deep bowl. At the same bowl, we add the cauliflower that we have mashed with a fork or crushed with our hands. We add eggs, ground cheese, salt, pepper, olive oil, and 1 tbsp of chopped fresh parsley and mix it all to make a dough. If you prefer the bacon, salami, or ham, you can add it now to the mixture. We diced it or cut it into pieces and mix with the other ingredients.

  7. We put it to bake in the preheated oven for about 30 minutes until it is golden.
