Cantaloupe Cake Recipe

Cold unbaked cakes are very preferred by everyone, mainly in the summer. They are easy to prepare and we can cook with our favourite flavours. In this article, we want to share our unbaked Cantaloupe Cake Recipe, light and healthy to consume by everyone. This Cantaloupe recipe is plenty of melon flavour, not too much sweet and perfect for any family meal or event. We cook for a birthday lunch in family and everyone enjoyed it and liked it very much.

  • 1 cantaloupe melon, about 2 kg.
  • 500 ml of cream for whipping with sugar
  • 500 ml of natural Greek yoghurt.
  • 20 g of isinglass ( gelatine)
  • 18 savoiardi cookies
  • For the gelatine on the top of the cake
  • 2 tbsp of sugar
  • 8 g of corn starch
  • 125 ml of water

Directions

  1. First, we clean the cantaloupe from skin and seeds part. Cut it in half, it will be about 1,5 kg of cleaned melon. We cut half of it in pieces and put in a blender to make a puree.
  2. We take an open cake stencil and put on the bottom of it the savoiardi cookies, that we deep firstly in a sweety liquid that you can prepare with sugar of water, or melon vodka, sugar and water. I prepare this liquid with melon juice, 1-2 tbsp of sugar, and 1 tbsp of mint liqueur.
  3. In a bowl, add the gelatine and add water and let it sit for a few minutes.
  4. In a big bowl, add the cream and whip it with an electric beater until it makes a solid cream.
  5. Add the yoghurt and continue to mix with the electric beater.
  6. Add the blended cantaloupe and mix it well.
  7. In a small pan, add the gelatine and 3-4 tbsp of the water that we put it to sit, and put in heat until it melted.

  9. Add all the mixture to the cake stencil that we prepared before with savoiardi cookies, and put in the freezer for 2 hours.Cantaloupe Cake Recipe- Family Cooking Recipes
  10. Passing the time, we cut the other half of cantaloupe in slices, each slice in half and each of them in thin pieces. We will use them to decorate the top of our cake. Put them like a rose leaves up to the cake.
  11. In a pan, we add water, sugar and corn starch to make gelatine to use upper the cantaloupe slices. The use of it is facultative in the recipe.
