It is a vegan dessert, and as it contains only whole grains and fruits, it is a healthy cooking, rich in fiber, protein, carbohydrates, and a variety of vitamins and mineral salts.

About Ashure

It is a dessert based on various cereals where the use of wheat predominates. Other grains that can use for this dessert are rice, chickpeas, corn, legumes, etc. Some other ingredients that can add to it are dried fruits, pomegranate, walnut, hazelnut, dates, spices, orange zest, lemon, cinnamon, clove, etc.
According to different traditions, the number of ingredients used in the Ashure recipe can be seven ingredients, ten, or twelve.

Tradition requires that whenever we prepare Ashura, we share it with our friends and family, as the symbol of this dessert is peace and love.
This dessert also has a religious context in some countries. The Muslim countries cook it on the tenth day of the first month of their calendar. Ashura word means tenth in the Arabic language. In Christian countries, it is a tradition to prepare for Christmas and New Year. In our country, the Bektashi community prepares this dessert every March 22.

The dessert is simple where the cereals used in the recipe, well-cooked, sweetened with sugar, jam, or honey, and season with dried fruits and various flavors.
We cooked it with wheat, and I also add a large variety of dried fruits. We replace the sugar with homemade jam, or honey.

I used dried fruits according to my preference. You can choose your favorite ones or what you have in your kitchen.

I used dried fruits for more flavor and to avoid excessive use of sugar.

We are in the spring, and we should eat as healthy as possible, prepare the body for the summer season and cleanse our body, so I recommend that the use of sugars be as moderate as possible.

For easier and faster cooking, I prefer to put the wheat or cereals in water for a few hours before cooking, or even overnight. In this way, I can cook this dessert faster.

After we boil the cereals well, add the sugar or other sweetener that we choose to use. Add also the starch diluted in water.
I try to boil the grains up to release their starch and achieving a natural thickening of it and not necessarily with high amounts of corn starch.

Finally, add the dried fruit and spices, divide them into bowls or cups for one person and decorate again with cinnamon and grated walnuts.

Ingredients

  • 500 g of wheat
  • 2.5-3 l of water
  • 3-4 tbsp of brown sugar
  • 1-2 tbsp of corn starch
  • ½ can of homemade jam
  • 100 g of nuts
  • 100 g of almonds
  • 50 g of hazelnuts
  • 50 g of dried cranberry
  • 100 g of dried apricots
  • 100 g of dates
  • 50 g of raisins
  • 50 g of dried plums
  • cinnamon, clove

Directions

  1. We will wash the wheat well and place it in a container with water to rest for a few hours before cooking it.
  2. Rinse it again and put on medium heat to simmer for 15-20 minutes with a liter of water.
  3. Meanwhile, we will also prepare the other ingredients. So we put the raisins, chopped apricots, chopped plums, cranberry in water to soften.
  4. We will chop the walnuts, almonds, hazelnuts, and dates with a kitchen knife.
  5. When the wheat boiled well and released its starch, I add sugar and jam. Stir well to dissolve the sugar.

  8. We throw it in disposable bowls or cups and decorate it with cinnamon powder, chopped nuts, and dried fruits.
