This Apple Yogurt Muffins recipe is simple, prepared in a few minutes, and much tasty.
It is a quick and healthy way to sweeten our breakfasts or snacks. You can enjoy it a lot with a glass of milk, tea, juice, etc. Prepare for your children and the whole family, as everyone will like it.
Ingredients
- 2 eggs
- 100 g of sugar
- 50 g of butter
- 50 ml of milk
- 125 g of natural yogurt (I used homemade yogurt)
- 1 tsp of vanilla extract
- 270 g of flour
- 8 g of baking powder
- 3 medium apples
- icing sugar
Directions
- We will prepare a muffin baking pan, cover each muffin banking shape with muffin baking paper. We preheat the oven to 180 degrees.
- In a glass bowl, we will add eggs and beat them with an electric hand beater, adding the sugar gradually. We will beat the eggs with the sugar until they swell and become a cream.
- Add melted and cooled butter.
- We continue to beat it, and without stopping, we will add milk, yogurt, vanilla extract.
- We will continue adding the sifted flour piece by piece, and once all the flour is mixed, we will add the baking powder stirring in the same way.
- We will peel two of the apples and chop them directly on top of the dough with a knife into small cubes, mixing with a spatula so that the apples do not oxidize.
- With a spoonful of ice cream or a tablespoon, we will throw the muffin dough in the form of muffins filling 3/4 of them. We will peel the third apple and cut it in the same way to decorate the muffin surfaces.
- After arranging the apple pieces as we like, we place the pan in the preheated oven to bake for 25-30 minutes.
- Once we take them out of the oven, we sprinkle them with powdered sugar and place them on a serving plate to serve them as desired.
