This Anchovies Pasta Recipe is a tasty first dish full of sea flavor and easy to prepare. It cooks quickly, in a few minutes, and we can eat it for lunch or dinner with family or friends.

This dish serves warm accompanied by a second fish-based dish such as Aliçi In the oven, or even a seasonal salad for a light dinner.
Ingredients – 4 Servings
- 400 g of linguine pasta
- 200 g of cleaned anchovies
- 1 garlic clove
- 1 bunch of fresh parsley
- ½ glass of white wine
- 2 medium tomatoes or 7-8 cherry tomatoes
- salt, pepper, olive oil
Directions
- We will clean the anchovies from the head, the abdomen part, and the spine. Rinse them well, drain them, and set them aside.
- Put a pot of water to boil and cook the pasta.
- In a saucepan, add olive oil, a clove of garlic split in half, and finely chopped parsley.
- Once the oil is flavored, add the cleaned anchovies and cook for 1-2 minutes until they change color.
- Quench it with white wine and increase the heat to evaporate the alcoholic part.
- While the alcohol evaporates, peel the tomato from the skin and cut it into cubes. If you have cherry tomatoes, just split them in half.
- After this step, add the chopped tomatoes to the saucepan, season it with salt and pepper, and let it cook at medium temperature until it makes a sauce.
- Meanwhile, the water boiled, add salt and pasta, and cook it al dente. We cook pasta one minute less than the indicated cooking time on the package.
- Once the pasta cooks, add it to the saucepan, add a little boiling water, and let it flavor with the taste of the sauce for a minute.
- In the end, season it with salt, pepper, olive oil, and fresh parsley.
- Serve it immediately, garnishing it with a pinch of olive oil and fresh parsley.

The recipe itself looks great….all but the anchovies LOL I am not much of a fan. Can this recipe be made without them? Would there be a good substitute? The ingredients look great, and I think it would all taste just fine without the anchovies 🙂 Any thoughts on what I could add instead? Or just leave them out.
Hi Leahrae, the best of cooking pasta is that you can combine it with everything that you like. If you like other seafood, you can replace anchovies with shrimp, or other seafood. If you are vegetarian, you can cook it without anchovies, just fresh tomatoes, garlic, olive oil, some olives, and parsley. You can explore our Blog for more pasta recipes.
