- 4 blackbirds
- 4 tbsp of flour
- 2-3 tbsp of butter
- 1 tbsp of tomato sauce
- a little powdered red sweet pepper
- olive oil
- salt, pepper
- Lemon juice
- 2-3 garlic cloves

- We start by cleaning the blackbirds from the feathers they may have.
- Also, dry them well and place them to fry, without cutting them, in a deep pan where we have added one tablespoon of butter and olive oil. Add salt and pepper.

- Then, let them simmer for 20 minutes covered.
- Meanwhile, in another saucepan, continue to cook the flour. So add one tablespoon of butter and 3-4 tablespoons of olive oil.
- Also, add the flour and continue to stir it until it gets hazelnut color. I used semolina flour, but you can also use 00 flour or combine it with cornflour.
- Then, add 500 ml of cold water and a little salt and mix it with wire so that it does not become a grain.
- Wait until it thickens, and we will also add the meat juice. Total about 1.2 l of broth. We should get a creamy mass and not thick.
- Next, add the sauce, salt if necessary, black pepper, red sweet pepper, and a few cloves of crushed garlic. Add the juice of half a lemon.
