These Healthy Rye and Oatmeal Cookies recipe is one of the sweet recipes you should try if you want to consume healthy desserts in your nutrition diet.

Dry Ingredients

  • 100 g of Rye flour
  • 100 g of oatmeal flour
  • 90 g of oat rolls
  • 100 g of all-purpose flour
  • a pinch of salt
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp cinnamon powder
  • 1-2 tbsp brown sugar (facultative)
  • 1 tbsp flax seeds
  • 100 g seedless Arabian dates in pieces
  • 50 g raisin
  • 60 g seedless dry plums in pieces
  • 100 g dark chocolate in pieces (facultative)

Liquid ingredients

  • 2 eggs
  • 1-2 tbsp full of honey
  • 4 tbsp of milk
  • 1 tbsp lemon juice
  • 60 g of melted or room temperature butter
  • 1 tsp vanilla extract

Directions

  1. First, preheat the oven to 180 degrees. Prepare a baking pan with baking paper.
  2. Then, we will mix in a bowl all kinds of flour.
  3. Also, add baking powder, baking soda, salt, cinnamon powder, dried fruits and mix well. If you want to add chocolate, you can add it here.
  4. Next, in another bowl, add the room temperature butter. Also, add the sugar if you want to add it. Otherwise, add the honey and mix it.
  5. Also, we will continue adding eggs, milk, lemon juice, vanilla and mix well to create a homogeneous mass.
  6. Then, add this mixture to the dry ingredients and mix until all the ingredients are combined.

Note:

  • You can combine other dried fruits if you want or add seeds, nuts, hazelnuts, etc., as desired.
  • Also, you can replace butter with olive oil, coconut butter, or other vegetal oil.
