Ingredients
For Potato Gnocchi
- 500 g potatoes
- 100 g of flour
- 1 egg yolk
- a little salt
For Basil Pesto
- One bunch of fresh basil leaves
- 50 ml olive oil
- 2 tbsp of Parmesan cheese
- 1 garlic clove
- 1 tbsp of pine nuts
- salt
Directions
- We will first start with the gnocchi. So, we will wash the potatoes and put them to boil unpeeled in a pot of cold water for 30 minutes.
- After that, we remove them and let them cool a bit. We clean potatoes from the skin and press them with a mash press.
- Next, mix the potato dough with a few flour, egg yolk, salt and form the dough.
- So, we will make this dough for gnocchi. We explained in previous articles the procedure.
- The next step is to prepare the pesto. We will prepare the basil pesto by pouring all the ingredients and some oil into the mixer cup.
- So, we mix it, and we will get the sauce. You can add oil if you see that it will be thick.
- In a pot, add water and salt, let it boil. Then, we will throw potato gnocchi and cook for one minute.
- Next, drain and toss in a large serving bowl. And, to mix the gnocchi with the pesto sauce, add two tablespoons of the gnocchi boiling water and pour the sauce over them.
- Finally, mix and serve warm. Fantastic taste.
- In the end, serve them immediately. You can add a little parmesan cheese on top if you want.
