Spring roll dough

- As a start, we will make the dough. In a bowl, we will add flour, salt, and warm water gradually. Also, mix it with a fork.
- Next, knead the dough by hand, being careful not to burn it at first. Then, when the dough is ready, we gather it with a cellophane bag and let it rest for an hour.
- Passing the time, knead the dough for a few minutes until we have a soft dough.
- Then, form a cylinder with the dough and divide it into pieces the size of a walnut.
- Also, sprinkle the dough pieces with flour so that they do not stick.
- Rounding them with our hands, we will roll them into small circles.
- Next, we will oil each of them well on the surface and place 5-8 pieces on top of each other. You can also add a little flour between the noodles to separate them later.
- The noodle discs should be the same size. First, we will try to press the joint of the layers with our fingers, trying to compress them easily. We should not squeeze tightly in the middle as they may stick and not separate after.
- When we have opened as much as we can with our hands, we will continue to roll the layer with a small roller. Roll it lightly until you open a circle with a diameter of 15-20 cm.

How cook the layers in the steam
- First, put a pot of water to boil. Use a steam cooking set. Next, place a parchment sheet on the base of the steam cooker, and when the water boils, place the spring roll layer above it.
- Then, let it cook for 6-8 minutes on steam. You will see that the layers will create bubbles. After, you can separate them easily from each other
- Next, we transfer it on a clean kitchen napkin and separate the layers easily. Be careful not to tear them.

Spring roll filling

- We will cook them for a few minutes until they soften. Drizzle with rice wine or a tablespoon of rice brandy (Sake).

- Before filling spring rolls, marinate the filling with soy sauce. Be careful with salt.
Folding Spring Rolls
- First, take a layer. Add one spoonful of the filling in the corner of one side of it.
