Rabbit With Vegetables In The Oven is a tasty main course to enjoy at the main meal on the weekend or even the holiday.
Rabbit cooked this way turns out flavored, tender, juicy, and liked by everyone who consumes meat in the family.
The recipe is simple and is partially cooked in the pan and ends in the oven.

Directions
- 1 rabbit
- 2 onions
- 3 green onions
- 3 ripe tomatoes
- 1 celery stick
- 1 carrot
- 1 zucchini
- 1 green or red pepper
- garlic cloves, bay leaves, rosemary, sage leaves, dry oregano
- salt, black pepper
- olive oil
- 1 glass of white wine
Directions
- First, chop the rabbit into large pieces, rinse it well, and let it drain.
- Before we start cooking, finely dice all the vegetables and keep them apart. Grate the peeled tomato and set it aside.
- Put a large pan with 2-3 tbsp of olive oil to heat. Add one branch of rosemary, sage leaves, bay leaves, and let the olive oil season.
- Add the pieces of rabbit and roll them well on all sides to get color and flavor. We enjoy the meat with salt and ground black pepper at the moment.
- When the rabbit pieces change color, we quench them with white wine. Raise the cooking temperature so that the alcohol evaporates.
- We remove the pieces of meat and place them in a baking glass casserole.
- Put the pan in the preheated oven at 200 degrees and leave it there to continue baking.
Preparing the Vegetable Sauce and Finishing the Cooking
- In the same pan where we cook the rabbit meat, we will add the minced onion and mix it. Add a little oil if needed.
- Continue cooking by adding the carrot and celery cut into cubes. Mix well until they tender.
- Add the zucchini and red pepper, and when we see that the vegetables tender, we will add the ground tomatoes.
- Mix it and add salt and pepper.
- We will cover it with a lid and let it cook for about 10 minutes, stirring occasionally.
- When we see that the sauce is ready, we will add one glass of water, which will help to cook the rabbit better in the oven.
- Add the dried oregano, the cut cloves of garlic, and we will add this sauce to the casserole with rabbit meat.
- Carefully place the pieces of rabbit meat on top and nicely.
- Put the pan covered with aluminum foil back in the oven and continue cooking for one hour.
- The rabbit meat will come out soft and juicy, accompanied by its sauce.
- We serve it as it is with toasted bread, seasonal salad, couscous, or as you wish.
