This Tuna Stuffed Zucchini Boats recipe is a second course to enjoy during the summer season that cooks in the oven.
Zucchini can be prepared and stuffed in several ways, such as minced meat, cheese, vegetables, rice, etc.
Today, we are sharing the tuna fish stuffed zucchini. It is simple to cook, with few ingredients, and with a delicate taste.
The tuna filling prepares by joining zucchini pulps, tuna fish, cottage cheese, or ricotta and herbs. The zucchinis are cut in half, emptied from the pulp, filled with the prepared mixture, and baked in the oven.

Ingredients
- 3-4 long zucchinis
- 170 g tuna fish in oil
- 4-5 tbsp of ricotta or cottage cheese
- 3 tbsp full of ground Grana or Parmesan cheese
- salt, pepper, olive oil, fresh parsley, or basil

- To prepare this simple recipe, first, we will wash and dry the zucchini well.
- We cut them in half lengthwise, and with the help of a small spoon, we will empty their middle in the form of a boat.
- In a blender glass, add the zucchinis pulps, the tuna, the grated cheese, and the cottage cheese or ricotta, and blend them well.
- We will also add salt, pepper, olive oil, and basil or parsley and blend them again until we get a creamy mass.
- We will prepare a baking pan which we grease with olive oil.
- Place the chopped zucchini in a boat and fill them with a spoon. We will add some minced cheese on top.
- Cover the pan with aluminum foil and place it in a preheated oven at 180 degrees.
- We will bake them covered for 15-20 minutes, then remove the aluminum paper and bake them for another 15 minutes at this temperature.
- Finally, activate the grilling process by baking for 5-7 minutes until they get the reddish color and create a crunchy crust on the surface.
- Serve them warm accompanied by a seasonal salad or soup for a light meal, or even as an accompaniment or appetizer, to our festive family tables.
