Directions
- We will roast the chicken with the skin so that it cooks soft and juicy. For this, we need to clean it as best we can from the remained feathers, rubbing the chicken skin with lemon and coarse grain salt. We take care not to damage the chicken skin. Rinse it in running water and wipe the chicken with kitchen paper.
- In a small bowl, we will mix the soft butter at room temperature with salt, pepper, finely ground spices, and lemon juice, and it will become a creamy mass.
- We will put the buttercream with the spices under the chicken skin without damaging it by rubbing the chicken from above so that the creamy butter spreads all over the chicken parts.
- We will rub the chicken from above with the rest of the lemon and lightly salt it, and if there is excess butter, we will also coat it from above.
- We transfer it to the ceramic pot with a lid. We will take care to use a dish in the right size for our chicken and sprinkle the chicken with a little olive oil for more taste.
