Easy Fusilli Pasta Recipe

  • 1 red onion
  • 1 garlic clove
  • 1 carrot
  • 1 zucchini
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1 big eggplant, or 2 small ones
  • 1-2 ripe tomatoes
  • 1-2 laurel leaves, fresh parsley, fresh rosemary, thyme, or other herbs that you prefer
  • 50 g ground parmesan cheese
  • Olive oil
  • Salt, pepper

Directions
