This Turli Perimesh- Baked Oven Vegetables is a summer dish that we can consume as a second plate during our lunch. Cooking this recipe in the oven make it taster and lovely even for the children. Combining with the beef meat make this recipe very plentiful in vitamins and proteins. For all those that don’t like or consume meat, this recipe can perfectly be cooked without meat, enjoying the flavours and colours of veggies.
Ingredients – 4 -6 Servings
- 1 onion
- 300 g beef
- 1 carrot
- 3 medium ripe tomatoes
- 2 eggplants
- 2 bell peppers
- 2 zucchini
- 2 potatoes
- Salt, pepper, fresh parsley
- Olive oil
Directions
- First, we prepare all the veggies for our recipe. Wash and rinse well everything. Cut the eggplants in slices like we cut an apple, and transfer in a bowl with salty water to sit for eliminating their bitter. We continue like this with all the vegetables. Peel the potatoes, cut julienne and put them in a bowl with water to not oxidate. Peel the carrot and cut julienne, clean peppers from seeds and cut julienne. The same with zucchinis. Preheat the oven at 200 degrees.
- Grease a baking dish, put all the cut veggies, add salt and olive oil and bake for 25 minutes. For a faster cook, you can stir-fry each veggie separately for 3-4 minutes in a pan.
- During this time, we cut the onion finely and beef in small pieces.
- In a pan, add a little oil, add chopped onion and beef and stir-fry together until they tender. Add the ground tomatoes, after removing the skin, add salt, pepper and let cook for 7-8 minutes in medium heat.
- We add all this mixture over the baked veggies, add a glass of warm water and continue to cook in the oven for 35-40 minutes. In the end, the veggies must be soft with a little liquid. Garnish with fresh chopped parsley. Serve it warm.
