Traditional Rabbit Stew Recipe

Albanian Traditional Rabbit Stew Recipe is a very tasty main dish, it is a slow-cooked dish, cooking in stew dish or a pan, but it also can perfectly cook in a pressure cooker for a faster-cooked way. This recipe, that we want to share with you, is a first plate cooked in a pan, and very lovely for all the family. The rabbit combines very well with the veggies and herbs used in this recipe for a unique and delicious flavour. The rabbit is riched in proteins and vitamins, easily digestible for our organism, so whenever than we can, let’s consume it.

Ingredients

  • 1 rabbit about 1-1.5 kg
  • 2 onions
  • 2 ripe tomatoes
  • 1  carrot
  • 1/2 cerely  stick
  • 1/2 glass of white wine
  • Some garlic gloves
  • Laurel leaves, salt, pepper, fresh parsley, salvia leaves, rosemary
  • Olive oil

Directions

  1. First, we recommend consuming a rabbit from the controlled origin. We wash the rabbit and cut it in pieces following rabbit anatomy, as we do with a chicken.
  2. In a large and deep pan, add olive oil, and the herbs: 1 fresh rosemary branch, 2 salvia leaves, 1 garlic clove, and let them all to season the oil with their flavours in medium heat.Traditional Rabbit Stew Recipe-Family Cooking Recipes
  3. We add rabbit’s pieces, that we have dried first, with a kitchen paper from the remaining water, and stir- fry for some minutes until they are golden. Add the white wine and increase the heat to evaporate the alcohol.Traditional Rabbit Stew Recipe-Family Cooking Recipes
  4. We cut the onions indices and add it to the pan. Add salt and black pepper. Stir- fry for some other minutes, mixing each 1-2 minutes. Continue cooking adding the diced carrot. Traditional Rabbit Stew Recipe-Family Cooking Recipes
  5. When the onion tender, add the ground tomatoes and mix again every 1-2 minutes. I use a hand grater to grate it.
  6. Add a glass of water to the pan, but you can adjust by yourselves the water quantity based on the rabbit that you are cooking, using less or more.Traditional Rabbit Stew Recipe-Family Cooking Recipes
  7. Add peeled garlic gloves, laurel leaves, and dry oregano. Cover it with a lid and slow cook in low heat for about 1 hour. The rabbit is properly cooked when its meat is soft and it remains with his liquid.

  9. You can also choose a side dish your favourite salad and a little warm and crusty bread. Rabbit stew is a tasty dish that can perfectly combine with a lot of side dish varieties, from salads and first plates. You can choose to serve it with rice, semolina, puree, baked or grilled vegetables, couscous, etc.

How to prepare delicious oven potatoes

  1. Preheat the oven at 200 degrees.
  2. Rinse potatoes in running water, peel and cut them julienne. Rinse well, dry them from the remaining water.

  4. Grease a non-stick baking pan and put potatoes in it to bake in the preheated oven for about 25-30 minutes.
