Tiramisu Cake Recipe

Tiramisu cake is a delicate and full of flavor cake to enjoy in our family meals and holidays. In the difference of the tiramisu previously presented prepared with Savoiardi biscuits, this cake sharing with you today, cooked with a sponge cake.

How to cook this cake

We have prepared this cake with a diameter of 26 cm with the sponge cake that we shared a few days ago with you.

You can also make a smaller sponge cake if you want to make a smaller Tiramisu cake.
Follow the same method by halving the ingredients for the preparation of sponge cake and the filling cream.

Another difference with the previous Tiramisu recipe is that in this recipe, we also used custard cream.

As we mention in the previous tiramisu recipe, we need to use fresh eggs for tiramisu cream, which for our safety it is good to pasteurize before adding to the cream.
I chose to prepare custard cream to realize safer and more consistent Tiramisu cake icing.

  • one sponge cake 26 cm in diameter

Prepare the cake filling cream

  1. The next step is to prepare the custard cream. We will set the milk to heat with lemon peel in it to flavor it during boiling.

  3. Stir constantly with a hand eggs wire so that the cream does not become a grain. The custard cream should not thicken too much. Pour it into a cold bowl and mix well to cool. Leave to cool in the fridge covered with a cellophane bag.
  4. Meanwhile, we make the espresso coffee ready.
    In a small pot, add the water and sugar, and put them on the heat until they boil and sugar dissolves.
    We need this syrup to combine with the espresso coffee to realize the liquid for softening the sponge cake. Mix it with the coffee and let the coffee syrup cool.
  5. When you have it all, we will make the tiramisu cream. We will place the gelatin sheet in cold water to soften. You can also use gelatin powder.

Assembling the Cake

  1. We start assembling the cake. We will use a plate and a ring to keep the cake in the right shape. Put a layer of sponge cake and moisten it with coffee syrup. Pour a layer of cream and pieces of chocolate.
