Tave Kosi Recipe is one of the most known Albanian traditional recipe, part of Elbasani tradition, known for various of a similar traditional recipe. We want to bring today Tave Kosi Recipe-Tavë Kosi Me Mish Qengji. Many of us use various type of meats for this recipe, but the traditional one cooked with Lamb.
Ingredients-4 Servings
- 1 kg Lamb
- 700 ml of yoghurt
- 2-eggs
- 2 tbsp rice
- 2 tbsp all-purpose flour
- 300 ml meat stock
- 50 g unsalted butter
- 2 tbsp olive oil
- Salt, pepper
Directions
- Preheat the oven at 200°C/390°F.
- Cut the lamb in pieces, rinse and dry with a kitchen towel. Put the lamb to a baking dish and bake for about one hour at the preheated oven. If you want a fast cook, you can choose to cook the lamb in a pressure cooking, but baked it is taster.
- Passing the half-baking time, cover the baking dish with a lid or aluminium paper, and add one teacup warm water.
- Transfer the baked lamb to another dish and with a colander filter the lamb stock, adding a little water to make the right quantity of stock for the recipe.
- In a non-stick saucepan, add the butter and flour and stir the mix, in medium heat until golden brown.
- Add the lamb stock and mix it in low heat until it creates a creamy sauce.
- In a deep bowl, add eggs, yoghurt, and the creamy sauce and mix until making a homogeneous mixture. Season with salt, pepper, and most nuts if you prefer the taste.
- Preheat the oven at 200°C/390°F.
- In a baking dish, add the cleaned rice, baked lamb, and the yoghurt mixture. Garnish with a little olive oil or butter and bake at preheated oven for about 45 minutes. The baking time depends on your oven. The top will be golden brown when it is cook properly.
- Let it rest for a while and serve it warm.
