Ingredients
The pasta dough
- 3 eggs
- 300 g of flour
- salt
Pasta sauce
- 400 g of fresh porcini mushrooms
- 1 tbsp butter + olive oil
- 1 garlic clove
- salt, black pepper
- parsley
- ground Parmesan cheese
Directions
- We will prepare the dough as we have shown in our homemade tagliatelle recipe. In a bowl, toss the flour and fresh eggs in the middle.
- Then, add the salt, and by mixing it first with the fork and then by hand, we will make and knead the dough.
- Let the dough rest for 30 minutes. And after this time, we prepare the tagliatelle using the pastry machine or the roll for opening the noodles. We have shown this procedure before.
- Leave the tagliatelle alone and prepare the mushrooms.
- Next, we will clean the mushrooms from the soil with a damp napkin. We cut their end tails with a knife.
- In other terms, If they are much dirty with soil, then you can quickly wash them with running water and dry them immediately. They should not suck water.
- Then, cut the porcini into longitudinal slices, including the cut part of the leg.
- In a pan, we will add butter and olive oil and a clove of garlic for flavor. Let it warm up a bit, and add the mushrooms.
- Next, let them get good heat. Add salt and pepper. After a few minutes, they are ready.
- Meanwhile, we will throw the tagliatelle in boiling salted water to boil. Our Porcini mushrooms will be ready very soon. Cook for two minutes as they are fresh.
- Then, drain the tagliatelle and add to the mushroom sauce. Mix for two minutes and add a few more boiling water to make them creamy.
- Finally, serve tagliatelle pasta warm, with fresh parsley on top and grated cheese if you prefer.
