This Sugar-Free Banana Bread Recipe is simple and healthy. It is one way to use healthy overripe bananas, consuming carbohydrate-rich food but without added sugar.
This bread will be sweet only with the bananas and dried fruits we will add to the recipe.
Also, this bread is a non-knead one. It cooks quickly and with few ingredients.

Ingredients
- 2-3 well ripe bananas (280-300 g of peeled ones)
- 1 egg
- 1 tsp of dry yeast
- ½ tsp of salt
- 3 tbsp of olive oil
- 50 g raisins
- 50 g dry apricots
- 375 g of flour +30-50 g flour to use during kneading
Directions
- We will throw the peeled bananas in a bowl, and with the help of a fork, we will puree them.
- Add the yeast and salt here and mix well.
- Add the egg and olive oil and mix again.
- Continue cooking by adding the raisins and apricots cut into small pieces approximately the size of grapes.
- In this well-mixed liquid mass, we will gradually add the sifted flour, trying to get a soft dough, which will not work.
- So we will mix until the flour is completely absorbed, but we do not knead it.
- Cover the dough bowl and let it rise for about 2 hours, or until it doubles in volume.
- Sprinkle the work table with enough flour, and with the help of a spatula, we will fold the dough over the flour so that it does not stick to us and let out the air.
- n this way, we also shape the dough as we wish. We can shape it in small equal round pieces or a single loaf.
- Grease the pan with oil and dust it with flour, and place the dough. Let it come a second time, and double the volume for at least 45-60 minutes.
- Once the time passes, we dust the bread with flour by giving it the decoration we like and bake it in a preheated oven at 190 degrees for about 20 minutes.
- Take it out of the oven, let it cool, and serve it as desired.
