Ingredients
- 2 chicken breasts, about 1 kg
- 6-8 slices roasted bacon
- 6-8 slices of Guda or cheddar cheese.
- Raw bacon
- salt, pepper
- fresh herbs(Rosemary, Thyme, Salvia, Majorana)
- 1 kg of potatoes
Directions
- First, we clean the chicken breast from the bones, rinse well, and dry it with kitchen paper.
- Once we have the chicken breast ready, we will cut it by opening it like a book. Put it between two baking sheets and beat it so that the meat softens and becomes easy to roll.
- Marinate the chicken with salt, olive oil, and ground black pepper at the moment.
- We proceed to add the raw bacon and place the marinated chicken fillet on top.
- Continue covering the surface of the meat with sliced cheese and another layer of roasted bacon. We roll it.
- With the help of kitchen twine, we will tie the roll to not open during cooking. We season it with fresh herbs. We will place the roll into a baking pan, and we will add the cut potatoes on the side.
- Peel the potatoes and cut them into full-length slices.
Marinate the potatoes with salt, pepper, and olive oil. Add a pinch of olive oil even on top of the roll.
Baking process
- We will cover the pan with aluminum foil and bake the covered roll at 200 degrees for 45-55 minutes.
- Once the time is up, we will take it out of the oven and remove the aluminum foil. We will test the roll baking with a fork. It should come in and out lightly. In this step, the potatoes are soft from the chicken juice.
- Put the baking pan back in the oven to bake it for another 10-15 minutes until it takes on a reddish color and becomes crispy on the outside.
- Once it is ready, take it out of the oven and let it cool a bit to cut it into slices.
- We cut it into slices and serve it as a main dish accompanied by baked potatoes.
