This Shrimp and Cheese Recipe is a Greek recipe, which combining with tomatoes and feta cheese, creates a delicious summer taste. It is easy to cook. I like to share with you, how I cook this recipe in my family. It is not a baking one, and I cook it in the pan, in a few minutes, quick and easy.
Ingredients for 6- Servings
- 500 g cleaning shrimps
- 1-spring onion
- 2-3 garlic cloves
- 3-4 large ripe tomatoes
- 250 g tomatoes sauce
- 150g fetta cheese
- 5- tbsp olive oil
- salt, ground black pepper, basil, oregano, chilly red pepper
Directions
- Rinse and clean your shrimps by head, shell, tail, and sand vein. If you prefer, for much tastier, let some of the shrimps with their head.
- In a large no-sticky pan, add a little olive oil and add the shrimps for 1-2 minutes in medium heat, seasoning with salt and pepper. Remove the shrimps and let apart to reuse later.
- At the same pan, add the onion and garlic, finely chopped.
- Stir-fry for 2-3 minutes and add the tomatoes diced, cleaning by peel and seeds. Let cook it on medium heat for 10-12 minutes until tender.
- Add 2-3 tbsp olive oil, add the tomato sauce, and let them cook for some other minutes. If the sauce gets too thick, you can add a little vegetable broth or just water to create a creamy and liquid tomato sauce.
- Add the frying shrimps to the sauce, low the heat, and cook all together for 10 minutes. Don’t let the sauce dry.
- Add the crumbled fetta cheese and cook it for 3-4 minutes until the cheese melt and season the dish. Garnish it with oregano and other preferred herbs, and the rest of olive oil.
- Transfer in a hot serving dish and serve the shrimp and cheese sauce warm. Accompany it with toasted bread.
You can also consume this dish as a pasta sauce or a hot appetizer.
