Ingredients
- 200 g of zucchinis
- 2-eggs
- 100 g of cottage cheese
- 100 g of bacon
- 50 g ground cheese (Parmesan, Grana, etc.)
- 120 ml olive oil, or you can replace half of this quantity with butter.
- 200 ml of milk
- 250 g all-purpose flour
- 50 g corn starch
- 1 tbsp salt
- ½ package of baking powder and 1 tsp of baking soda
Directions
- We preheat the oven at 180 degrees.
- We rinse the zucchini well, grate them in a grater, and transfer in a deep bowl.
- We add all the other liquidy ingredients, one by one, eggs, milk, cottage cheese, oil, ground cheese, and diced bacon, and we mix all.
- In another bowl, we mix the other ingredients, sifted flour and starch, baking powder, and baking soda. We add this mixture to the other bowl and mix well until to make a homogeneous mixture.
- We prepare a baking dish, grease with a little butter, and flourish it with flour. Add the mixture and bake it for about 40-45 minutes.
- Turn of the oven, let it cool for a while, and transfer in a serving dish. We serve it lukewarm or cold.
