Ingredients
- 200 g dry red lentils
- 2 eggs (one egg for breading)
- 1 small potato
- 1 carrot
- one small onion
- Rosemary, bay leaves, parsley
- salt, pepper, olive oil
- 2 tbsp of grated parmesan cheese
- 2 tbsp of cottage cheese
- Bread crumbs or one slice of bread for the meatball dought
- bread crumbs for breading
- 100 g of diced soft cheese
Directions
- First, we will wash the lentils well. I prefer to leave it in the water overnight to boil it faster.
- Once we have washed and drained them well, we will put them in a pot along with the potatoes, carrots, onions, and spices. Next, cover them with water and boil them well.
- Then, when we have them ready, we drain them from the liquid they may have and put them dry together with the vegetables in a kitchen shredder.
- Also, add the egg, cheese, cottage cheese, oil, and spices and grind them together. In the end, it will result in a not too soft dough.
- Then, shape the dough into a round shape by hand and place a piece of soft cheese in the middle of it.
- Next, pass the meatballs to the beaten egg. Then, roll over to the breadcrumbs, and place them in a baking pan with baking paper.
- We will bake them in a preheated oven at 200 degrees for 15-20 minutes.
- Finally, take them out of the oven, place them on a serving plate and serve warm with the sauce you like.
