Cheesecake is a delicious dessert for the hot summer days. We want to share with you this Non-Bake Cheesecake Recipe, very easy and tasty, and perfect for your family meals. We will show you two ways to serve this recipe and how to prepare by yourself a delicious dressing jam for your unbaked cheesecake in only 5 minutes.
Ingredients
For the cheesecake base
- 200g cookies
- 100g melted unsalted butter
For the filling cream
- 250g cheese cream Philadelphia
- 300 g condensed milk
- 200 ml cream for desserts
- 2 tbsp Greek yoghurt
- 2 tbsp lemon juice
- Fresh fruit or your favourite jam
Directions
- Blend the cookies and add them to a large bowl.
- Add the melted butter and mix to create a dough for the base.
- Grease a dish, or cake stencil, where you prefer to mont the cheesecake, and cover it with baking paper.
- Open the cookie mixture over the baking paper and with a spoon push it to create a homogeneous cookie base.
- Transfer it to the refrigerator and start to prepare the filling cream.
- In a bowl, add the cheese cream, Greek yoghurt, and condensed milk, and mix it all together.
- In another bowl, add the cream for desserts and beats it with an electric beater until it has a creamy consistency.
- Add this cream to the cheese cream mixture, together with the lemon juice.
- Take the cookie base out of the refrigerator and add the cheese cream mixture over it, spreading in a homogeneous level. Transfer again to the refrigerator for at least 3 hours, or prepare it the day before to serve it.
Before serving the cheesecake decorate it with fresh fruits or your favourite jam.
How to prepare one Serving Cheese Cake
Prepare the cream and the cookie base the same way as above. Take as many glasses as there are the persons you would like to serve the cheesecake to and follow the same directions as above.
Put the cookie base first, add the cheese cream mixture and transfer to the refrigerator until it is time to serve it.
Decorate your cheesecake as you like, using fresh fruits or jam.
How to prepare the jam for the cheesecake
Ingredients
- 200 g fresh soft fruits, like blueberry, blackberry, or other berries.
- 50g of sugar
- 2 tbsp lemon juice
Directions
In a deep pan, add soft fruits, sugar and lemon juice and let to boil. When the fruit starts to boil, stir the jam and put the heat in minimum. Stir mix time after time for about 5 minutes, and your jam is ready. Let it cool and use it to serve the cheesecake. This jam will not result very sweet, but it will combine perfectly with cheesecake sweetness.
