Ingredients
For the base
- 200 g of dry cookies
- 100 g melted butter
For the filling cream
- 500 g Philadelphia cheese cream
- 250 ml whipping fresh cream
- 300 g fresh strawberries
- 120 g powder sugar
- lemon juice+lemon zest
- vanilla
- 2 gelatin sheets (4 g)+30 ml of fresh cream to dissolve it

- Fresh strawberries
Directions
- We will prepare the cheesecake base. First, we grind the biscuits finely. Melt the butter and mix it with the biscuits.
- In the meantime, we will place parchment paper on the base of a cake ring with the opening feature.
- Then, lay the biscuits mixture in a layer and level it well. Put the base in the refrigerator to thicken a little until the cream is ready.
- Meanwhile, place the gelatin sheets in cold water to soften them.
- Next, add the whipping cream and sugar to a bowl and beat it until it becomes creamy. If the cream is sweet, then we will add less sugar.
- Also, add the Philadelphia cream cheese and continue mixing until it becomes a homogeneous cream.
- Then, we will wash and chop the strawberries and grind them in a power shredder. Also, add a tablespoon of lemon juice and minced lemon peel.
- Then, transfer the mixture to a colander and eliminate the seeds. Add this cream to the cream cheese and mix well.
- Next, we will heat two tablespoons of cream, and there we will melt the softened and drained from water gelatin. Add this to the cream obtained above and mix well again.
- Add the cream to the base and level it. We will put it in the fridge and let the dessert thicken for a few hours.
- Finally, garnish at the time of serving with fresh strawberries.
