Ingredients
- 500-600 g of fresh anchovies
- 4-5 garlic cloves
- fresh parsley
- 150-200 ml of olive oil
- 200 ml of lemon juice (about 6-7 large lemons juice)
- salt, black pepper, red pepper
- fresh chili pepper (facultative)
- 2-3 tbsp of white vinegar
Directions
- First, we will clean the anchovies. Thus we will remove their heads, intestines, and spine by opening them in fillets like a book.
- Rinse them well in running water and let them drain well from the water. Meanwhile, we prepare the marinade.
- As a start, in a blender or kitchen shredder, we will add parsley, garlic, a part of olive oil and lemon juice, salt, and pepper and fry them to become a mass.
- Also, mix it with the rest of the marinade juices.
- We also cut the hot pepper into pieces.
- We will place the cleaned anchovies on a plate or container.
- Then, add the chili pepper, the red pepper, and the prepared marinade on top. We will cover the container well and let it rest in the fridge overnight.
- Serve the marinated anchovies fresh directly from the fridge by draining them from the excess marinade and serving on an open plate.
- We should consume them immediately after taking them out of the refrigerator. We can store them in the marinade mixture for 1-2 days in the fridge.
