Lamb is part of Albania traditional food, and it cooks all around our country, but mostly in the south of Albania, from where we bring this delicious recipe for you. This Liver And Onions Recipe prepares with lamb liver, onions, and rice. We suggest it as a dinner or lunch meal and a tasty choice for the weekend.
Ingredients – 4 Servings
- 300 g lamb liver
- 300 g rice
- 2-spring onions
- 3-4 tbsp olive oil
- fresh mint or dry mint
- salt, black pepper, red pepper
- 1-liter meat stock or water
Directions
- Cut the spring onions finely, and in a saucepan, add the oil and onions and stir-fry until tender in medium heat.
- Wash the liver and cut in small pieces, and add to the onions. Stir-Fry the mixture for the other 3-4 minutes.
- Add the cleaned and washed rice add the saucepan, and mix for 2 minutes until golden.
- Add the warm water or stock and season with salt, pepper, and herbs. Let all boil for 10 minutes.
- During this time, preheat the oven at 200°C/390°F.
- Transfer the boiled mixture at the baking dish, and roast at the preheated oven for about 30 minutes.
- This recipe needs a slow-cook process, and the rice with remain soft inside and crusty outside.
- Transfer the baked liver and rice in a warm serving dish and serve it warm.
