Kidney Bean Meatballs

Bean is a vegetable that never misses in our tables all year. We consume it unripe in pod or seed, but the dry one is the most used and preferred during the cold fall, winter, or spring days. We mostly cook it in traditional dry bean soup, but today, we want to share with you another tasty bean recipe, Kidney Bean Meatballs. 

The Bean offers a lot of nutritional value, and we consume it in all ages, since in the young babies’ age. In this recipe, we use kidney bean, but you can replace it with any other beans variety. When we consume 100g of cooked kidney beans, we get 530 Kj. Considering vitamins and minerals, it is a rich source of our daily values in carbohydrates, proteins (more than 20%), folate( 33%), iron(22%), phosphor (20%),  and a moderate value in magnesium, copper, thiamine, zinc, Vitamin C, K, E, and B6.

We will prepare baked bean meatballs, considering a healthy cooking way, but you can also cook them fried.

  • 250-300 g of cooked kidney beans
  • 1-egg
  • 50 g of bread crumbs, or a slice of bread, plus another bread crumbs for breading
  • 50 g grated Parmesan cheese
  • 1 tbsp finely chopped fresh parsley
  • basil leaves
  • olive oil
  • salt
  • pepper

Directions

  1. First, we will cook the beans. We place the beans to sit in water for a few hours before cooking, or all the night before. We rinse them well and put in a pressure cooker, cover beans with cold water, and cook for 20-30 minutes, depending on the pressure cooker that you use. You can choose to cook more and one part to use for this recipe.
  2. We dry the beans, and we use a masher to press them and make a puree, and after that, mixing with other ingredients.
  3. Quickly, we put all the ingredients in a mixer. We add cooked beans, grated parmesan, bread crumbs, or bread slice, egg, salt, pepper, 2-3 tbsp of olive oil, parsley, and basil, and we mix all to make a dough with them. When you choose to replace the bread crumbs with the slice of bread, then we put it to moist in a bowl covered with milk or water for a few minutes, dry it, and add to the other ingredients.
  4. Preheat the oven at 200 degrees.

  6. We will prepare a baking pan, covering with a baking sheet, and transfer the bean meatballs on it. We put the to bake in the preheated oven for about 20-25 minutes until golden. Kidney Bean Meatballs- Family Cooking Recipes
  7. Let them cool and serve them warm or in room temperature, accompanied by a salad, a mix of cheeses, and a glass from your favorite wine.
