I like to hand-kneaded the bread by myself most of the time, and today, I want to share with you How To Make Black Bread by yourself. I’m going to explain all the hand-kneaded process.
Also, I’ll give you the recipe for the mixture of the flours to make the black bread at home, using the bread machine or in the hand-kneaded technique.
The black bread is tasty and healthy for everyone, riched in fibers and carbohydrates.
Ingredients
- 500 g blend of black bread flours
- 300 ml of warm water
- A packet of dry brewer’s yeast, or 25 g of fresh brewer’s yeast
- Olive oil
- 1-tbsp salt
Note: You can find a mixture of black bread flours in the supermarket, but if you like to prepare it by yourself, I’m showing you the recipe.
Ingredients for 500 g blend of black bread flours
- 375 all-purpose flour type “00”.
- 20g flour of rice.
- 15 g flour of corn.
- 15 g flour of wheat type “0”.
- 12.5 g flour of rye
- 10 g flour of integral Saracen wheat
- 10 g sunflower seeds
- 10 g sesame seeds
- 10 g ground roasted barley
- 10 g flax seeds
- 10g soft wheat flakes
- 2.5 g oat crust
Directions
To make our hand-kneaded black bread, let’s follow the below directions.
- In a bowl, add the mixture of flours, making a fountain, add the yeast, salt, and oil, and start mix to make the bread dough, adding the warm water little by little. It must be a homogeneous mixture. We must continue to hand-kneaded for 15-20 minutes until the bread dough to be elastic and smooth.
- Transfer the bread dough in a floured glass bowl, cover with a wet towel and sit for at least 30 minutes at room temperature, about 28-30°C/82.4-86°F.
- Passing the time, in a floured pastry board, roll out the leavened dough with a rolling pin and roll it up to a long shape.
- Transfer the bread to a baking tin covered with floured baking paper, sprinkle with flour the bread surface making two diagonal cuts helping by a knife.
- Leave to bump-up in the oven-off for about three hours, until double the volume.
- When the bread is ready to bake, preheat the oven at 210°C/410°F.
- Bake the bread at the preheated oven for 15 minutes at 210°C/410°F, and for other 30-35 minutes at 180°C/350°F.
- Before removing the bread from the oven, check the cooking with a toothpick. You can personalize the baking time based on your oven features.
