Homemade Raspberry Cake Recipe

This Homemade Raspberry Cake Recipe is a light and tasty recipe fulfilled of the delicate flavour of the raspberries for a healthy breakfast or as a dessert after our family meals.

  • 2 eggs
  • 150 g of sugar
  • 100 g melted butter or corn oil
  • 250 ml of natural yoghurt or fruit yoghurt
  • 250 g all-purpose flour
  • Lemon zest
  • Vanilla extract
  • 1 package of baking powder
  • 200 g fresh raspberries

Directions

  1. Preheat the oven at 180 degrees
  2. In a little pan add the butter to melt and let it cool.
  3. In a deep bowl, add eggs and sugar and mix together with an electric egg beater until it creates a foam.
  4. Add the melted butter in room temperature, continue mixing. Add yoghurt, ground lemon zest and vanilla extract, and continue mixing adding little by little the sifted flour mixed with baking powder.   6. Grease a cake stencil with a little butter, flourish it, and add the cake dough, adding the rest of fruit on the surface.
