This is a simple recipe to cook in our daily menus or weekend meals to enjoy with all families. It is the first dish that does not disappoint times.

Ingredients – 4 Servings
- 300 g fresh mushrooms (champignon or others)
- 1-potato
- 1-carrot
- 1-small onion
- 20 g of butter
- 2 l chicken broth
- 100 ml cream
- olive oil, salt, pepper, fresh parsley
- toasted bread, 3-4 mushrooms in slices for serving
Directions
- We clean the vegetables and mushroom and cut them into pieces. We remove the mushroom skin and rinse well the mushroom feet to eliminate soils on them.
- In a deep saucepan or pot add the butter and olive oil and the chopped onion and stir fry it for 2 minutes. If you don’t like the butter, use only olive oil.
- Add diced carrot, mushrooms, potato, and stir-fry them all for the other 2-3 minutes. Add the hot chicken broth and let them cook for at least 15 minutes. We blend all the soup mixture in a kitchen blender or mixer and season it with cream, salt, and pepper. Let it taste in medium heat cooking for another minute. In the end, we add lemon juice and fresh chopped parsley. In a saucepan, add a little olive oil and toast the diced bread. After that, we remove the bread, and at the same pan, we stir-fry thin slices of mushrooms. Serve the cream mushroom soup hot adding toasted bread and fried mushrooms on the top.
