- 400 g of spaghetti pasta
- 4 -5 large well ripen tomatoes
- salt, pepper, olive oil
- garlic clove
- fresh basil leaves
- ground Parmesan cheese

Very simple and without many ingredients, we will prepare this tomato pasta recipe. In a large saucepan, we will pour water and let it boil. Meanwhile, we will prepare the sauce. First, we peel tomatoes.
How to peel tomatoes?
I clean ripen tomatoes from their skins as below.
- First, we clean tomatoes with a kitchen knife as we do with other vegetables. After that process, we dice them, grind them on a grater or in an electric shredder.
- Second, we clean tomatoes by sitting first in boiling water to peel their skin.
Put a pot of water on the fire, and when the water boils, we will dip the whole tomatoes in it. Make a cross-cut on top of the tomatoes for easy cleaning.
Dip them for a few seconds and take them out. We clean the skins and cut them into cubes.
Cooking tomato basil pasta sauce
- In a deep saucepan, we will add garlic and olive oil. As soon as they get the flavor, add the diced tomatoes. Let it cook on medium heat for 10-15 minutes.
- The tomato will lose half its volume when the sauce is ready. In the end, we will add salt and pepper. The sauce is ready when the fat comes out on the side of the pan.
- Meanwhile, we toss the spaghetti to boil in boiling salted water. Drain the cooked pasta al dente and add it to the sauce and mix for a minute.
- Add a little of the boiling water, a little olive oil, and fresh chopped basil by hand.
- Serve pasta immediately with minced parmesan cheese on top.
