Ingredients for 4- Servings
- 300 g fresh green peas
- 1oo ml bechamel sauce
- 1- liter vegetable or chicken stock
- 2-spring onions
- salt, pepper, parsley
- olive oil
- 2- toasted slices of bread
Directions
- In a deep pan, add a little oil to heat, and after that, add the finale chopped spring onions.
- Let tender 1-2 minutes and add the clean and washed green peas. Stir fry for 2-3 minutes and add the stock, and let all boiled for 15 minutes.
- Add the bechamel sauce and chopped parsley and let boil again for 2 minutes. Let cool a little and pass to the blender all the boiled mixture until blend well and create a cream soup.
- Transfer all in a pan and season with salt, pepper, olive oil, and lemon juice if you prefer. If the cream pea soup is too thick, you can thin it adding other stock or a little warm water.
- Toast the bread and diced. Serve the pea soup warm with diced toasted bread. Garnish it with other finely chopped herbs and a little bit olive oil.
