Eggplant is one of the veggies that we can find fresh in the market almost all year. For that reason, we can prepare hundreds of recipes with it, especially in the summer and autumn. This Eggplant Pie Recipe is easy to prepare for a savory first plate or appetizer.
What I like most about this kind of recipe is the fact that we can prepare them, combining all the ingredients that we like.
We can prepare delicious veggies pies in our kitchens in the same way as we do with pizza or salty cakes using what type of ingredients that we prefer. For the veggies pie, we can use homemade dough or to bye it ready. The dough can be gluten-free, or phyllo dough, or a puff pastry dough. Eggplant combines very well with fats, dairy, hams, and meats to prepare delicious dishes and recipes. I like to share today, the tips and guide how to prepare this eggplant pie, but you can explore new ingredients combining and use any ingredients that you have in your home.
Ingredients
- 1- puff pastry sheet ready to cook, or homemade phyllo dough
- 1- big eggplant
- 50 g gouda cheese
- 50 g mozzarella cheese
- 100 g smoked ham or 100 g ground beef, or you can mix them.
- 50 g of cottage cheese
- salt, pepper, olive oil, fresh parsley, basil leaves
Directions
- First, we cut the eggplant in small cubes and put them in a bowl with salty water and let them sit for 20-30 minutes to eliminate the bitter that may have the eggplant.
- In a pan, we add a little olive oil and diced eggplant and stir-fry in medium heat until the eggplant tender.
- During this time, we cut the cheese and ham in pieces, and chop the fresh parsley finely. If we use ground meat, I suggest to stir-fry it in another pan for about 10 minutes.
- Preheat the oven at 180 degrees.
- In a bowl, we mix all the ingredients to prepare the filling pie.
- We grease a pan, take the puff pastry, and lay on it, leaving the bords and piercing with a spoon.
- Add the filling over it, season with salt, pepper, olive oil, and some pieces of gouda cheese on top, and put it to bake in the preheated oven for 45 minutes.
- After baking, let it cool for a while, decorate with basil leaves, and cut it in pieces and serve it warm. We can also prepare before, keep it in the refrigerator, and warm before serving it.
