This Easy Quinoa Salad Recipe is a rich dish with nutritional values and easy to prepare. It is a vegetarian one, and you can serve it as an accompaniment, side dish to a family lunch, or even as a single meal for a light dinner. It is a plate full of a variety of nutritional values, colors, and ingredients.
About Quinoa
Quinoa is a grain that belongs to the amaranth family originating from the Andes, South America. It is one of the grains used for thousands of years, first to feed animals, and then it was used by humans, precisely because of the high nutritional values that its seeds contain. Quinoa is available in white, red, and black.
Quinoa seeds are rich in dietary fiber, Vitamin B, protein, and minerals.
We provide over 20% of daily values, in protein, B vitamins, mineral salts such as manganese, phosphorus, iron, zinc, folate, dietary fiber, and magnesium, by eating cooked quinoa. The boiled quinoa is 72% water, 21% carbohydrates, 4% protein, and 2% fat.

Ingredients
- 250 g Quinoa
- 500 g of champignons
- 250 g cherry tomatoes
- 1-red pepper
- 1- red onion
- 1- clutch of lettuce salad, or arugula
- 2-boiled eggs
- 1 bunch of parsley
- Thyme, laurel, 2 garlic cloves
For dressing
- one lemon juice
- 3 tbsp white winegar
- olive oil
- salt, pepper
Directions
- We will rinse the Quinoa well in running water before cooking it. We will use the one to three ratios of the amount of quinoa to water. We will add 750 ml of water for 250 g of quinoa. We cook it in salty boiled water for about 20 minutes.
- Meanwhile, we continue with the preparation of the mushrooms. We will clean the mushrooms and cut them into slices. We transfer them to a baking pan lined with parchment paper, and we add salt, pepper, olive oil, garlic, thyme, and laurel leaves. We will bake them in a preheated oven at 180 degrees for about 20 minutes.
- We rinse the lettuce salad and dry it. We cut the tomatoes in half. Chop the pepper and red onion into slices. We boil the eggs and cut them into pieces.
- We also prepare the salad dressing. In a bowl, we will add vinegar, lemon juice, olive oil (which needs three times the amount of vinegar and lemon), salt, and pepper, and mix them well to create a creamy sauce.
Assembling the Salad
- In a bowl, we will add boiled quinoa, with the other ingredients, mushrooms, tomatoes, onion, pepper, where we leave a part of them separately for the salad decoration. We will add half of the dressing and mix it well.
- On a plate, we will mount the salad by first laying the chopped lettuce salad by hand.
- We will add the quinoa mixed with the other vegetables on top of the lettuce salad. We add sliced eggs, the rest of the mushrooms, tomatoes, onion, pepper, and the rest of the salad dressing on top of it. We season it with fresh parsley leaves.
- Serve it immediately as desired.
