Beet Gnocchi Dough
- First, we will wash the potatoes with running water and put them to boil with the whole skin. Also, we choose old potatoes because they are best for preparing gnocchi. The new ones contain a lot of water.
- So, we will put the washed potatoes in cold water, cover them and boil them for 30 minutes. Also, add a little more salt from the end of the cooking and check their boiling with a fork.
- Then, let them cool a bit, clean them from the skins and press them with a potato masher.
In a deep bowl, add the minced beets and the flour. Cook Beet Gnocchi
- We will cook as much beet gnocchi as we need for serving. The other gnocchi can freeze and use for a quick meal.

- Drain them with a colander spoon and add them to a pan with fresh butter. The amount of butter depends on the amount of gnocchi to cook.
- So, add the gnocchi and a little of their water into the pan. Add the minced parmesan cheese and mix carefully in the pan in a circular motion. We serve beet gnocchi immediately.
