This Easy Homemade Banana Muffins recipe is simple to prepare for a quick and cinnamon-flavored breakfast. These muffins are flavored, soft, crunchy, and very tasty.
It happens to remain very ripe bananas in our kitchen. My daughter does not prefer to eat a very ripe banana, so I use it as an ingredient for various recipes. It is one of the recipes you can cook for your kids.
You can also try Banana and Chocolate cake, and you will delight your children and the whole family.
Add nuts, dried fruits, or pieces of chocolate to this recipe as you wish to enrich your taste and preferences.
Ingredients
- 3 ripe bananas
- 1 egg
- 100 g of sugar
- 80 g of melted butter or oil
- 30 ml of milk
- 50 g coconut flour
- 140 g of all-purpose flour or whole flour
- 1 tsp of baking powder
- 1 tsp of baking soda
- a little salt
- 1 tsp of cinnamon powder
- 1 tsp of vanilla extract
- ¼ tsp of nutmeg
For topping
- 1 tbsp of sugar
- 1 tsp of cinnamon
Directions
- Turn on the oven to heat to 200 degrees.
- Prepare a baking muffin tin by coating it with butter, sprinkling it with flour, or coating it with muffin baking paper.
- We will mix in a bowl all the dry ingredients, flour, coconut flour, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla if you have the vanilla powder.
- In another bowl, beat the egg with the sugar until foamy, add the milk and melted butter and mix well.
- Peel bananas, mash them with a fork to make a puree.
- We will add it to the liquid mass and mix it well.
- Combine the dry ingredients with the liquid ones and divide the resulting mass into 12 muffin tins by filling the ¾ of the tin.
- We will sprinkle them on the surface with a sugar and cinnamon mixture.
- We bake them first in the preheated oven at 200 degrees for 5 minutes. After that, we bake them for 12-15 minutes at a temperature of 180 degrees. Do thee toothpick test.
- Remove them from the oven, let them rest for a while.
Then remove them from the baking tin and transfer them to a plate to cool completely before serving as desired. It is a quick and tasty food for your breakfast.
