This Easy Apricot Cake Recipe is a summer recipe full of flavor and delicious. It prepares quickly in a few minutes.
We can serve the cake for breakfast, afternoon, or after a meal.
Since we are in the period when we find apricots fresh, I recommend you use them and other fruits as much as possible in your recipes, whether cakes or not.

Ingredients
- 2 eggs
- 100 g of sugar
- 70 ml of oil
- 50 ml of milk
- 200 g of flour
- 250 g fresh apricots
- 1/2 package of baking powder
- ground lemon zest
- a little salt
- icing sugar for the top
Directions
- In a glass bowl, with an electric beater, we will beat the eggs with the sugar until it becomes foam. Add a pinch of salt.
- Next, we will add the oil and continue mixing.
- Add the milk, the minced lemon zest, and finally the sifted flour together with the baking powder.
- Rinse the apricots, dry them, and remove the seed. We cut some of the apricots into small pieces. Add them to the cake dough. Mix it well with a spatula.
- Cut the rest of the apricots into slices to place on top.
- Prepare a 22 cm of diameter cake baking pan. Grease it with butter and flourish it.
- We will throw the prepared dough and place the sliced apricots on the top.
- Place the pan to bake in the preheated oven at 180 degrees for 35 minutes.
- Try baking the cake with a toothpick. We will remove the cake from the oven and let it cool.
- Sprinkle it with powdered sugar and serve it as desired. You can accompany it with ice cream in the hot season.
