The yogurt is a healthy dairy, and in our family, we consume all year, but, in the summer, any yogurt recipe is super fresh and delicious.
This Cucumber and Yogurt Soup Recipe is the easiest. You can prepare in five minutes and very tasty to consume in any lunch or dinner meal.
The ingredients for One Serving
- 300 ml homemade regular yogurt
- 1-2 medium cucumbers
- 2-3 tbsp Olive Oil
- 1-garlic cloves finely chopped
- 1-tbsp dill or mint finely chopped
- salt
- ground black pepper
Directions
Peel the cucumber and ground with a grater in a deep bowl. Add salt, pepper, oil, garlic, dill, and mix.
Add the yogurt in the mixture and mix until yogurt gets tasty by the spices and oil.
Transfer the cold soup in a soup dish and serve fresh. Garnish with chopped dill and olive oil.
This yogurt soup is a healthy combination with the Albanian Spinach Pie.
Tips:
If you want the soup thinner, you can add more yogurt, and if you prefer thicker, that you can add more cucumber.
