This Courgette Rosti Recipe is quick and easy to prepare. It is delicious, and we can cook it with a few ingredients we always have at home. We can cook a tasty warm appetizer for our summer meals in less than 20 minutes.
You can cook the recipe with zucchini or summer squash. I like to try practical recipes for summer meals, and this one is one of them. One of my favorite summer squash recipes is the burek recipe.

Ingredients
- 600 g of zucchini or summer squash
- 1 large egg or 2 small ones
- 2 tbsp full of ground cheese
- 2 tbsp of flour
- 1-2 tbsp full of cottage cheese
- 2 tbsp of finely chopped fresh parsley
- salt, pepper, olive oil
Directions
- First, we wash the zucchini, dry them, cut the extremes, and grate them in a grater. When you will cook the recipe with the summer squash, first peel it.
- Transfer the grated zucchini to a colander, add a little salt, and let it drain the water for 10-15 minutes.
- Then squeeze it tightly by hand or even wrapping it with a kitchen towel to remove any remaining water.
- In a bowl, we will add the grated zucchini, egg, flour, cheese, cottage cheese, parsley, salt, pepper and mix them well to form a homogeneous dough.
- We will place a non-stick pan on the fire with 1-2 tablespoons of olive oil.
- With the help of a tablespoon, we will take the dough and place it in the pan by pressing it a little so that the dough opens a little and bakes better.
- We will cook them on medium heat for 2-3 minutes on each side until they turn golden and bake in the middle.
- After cooking them, we place them on a plate with kitchen paper to remove the amount of oil on the surface.
- Serve them warm with your favorite sauces. I made a tasty sauce to accompany it. I mixed 2-3 tablespoons of natural or Greek yogurt, one teaspoon of mustard, one teaspoon of lemon juice, salt, pepper, and two tablespoons of olive oil.
