This Cornmeal Cookies Recipe turns out super delicious. If you prefer to prepare something quick to accompany your coffee or tea in the morning or during the day, I suggest you try it.
The recipe cooks quickly and with ingredients that we always have in the kitchen.
The biscuits come out soft on the inside and the cornflour combined with the wheat flour makes them have a delicate, crumbly, and light-to-eat taste.

I baked for about 300 g of flour in total, which is two baking trays with biscuits, and, if you want more than double the ingredients.
Also, for the shape, I have used pastry bags.
You can easily use two spoons to shape the dough, as it turns out soft. Another way, lubricate your hands lightly with oil so that it does not stick, and shape your cookies as you wish with your hands.
Ingredients
- 150 g cornflour
- 175 g flour 00
- 100 g of soft butter at room temperature
- 50 g of icing sugar
- 50 g of white granulated sugar
- 2 egg yolks
- Lemon zest and vanilla extract
- 5 g baking powder
- 80 ml of milk
Directions
- In a deep glass bowl, we will first add the room temperature butter. Also, add ground lemon zest, vanilla flavor, and sugar. If you prefer only lemon or vanilla flavor, you can choose between them.
- We will mix them well with an electric beater for a few minutes until we get a creamy mass.
- After that, continue mixing by adding the egg yolks one by one. Once the first egg yolk is absorbed, we add the second one.
- In the creamy mass, we will add the flour mixture with the baking powder. Gradually add until all the flour is mixed.
- Finally, we add the milk, which will help us to have a soft and creamy dough.
- After that, we throw the dough in a pastry bag with a large serrated shape and shape it in a baking pan lined with baking paper.
- Next step, we will bake the biscuits in a preheated oven at 180 degrees for 15 minutes.
- Once the cookies are ready, we take them out of the oven. Let them cool and transfer our cookies to a serving plate or even to a cookies box to consume for longer.
