We cook this recipe fresh pineapple, but you can replace it with a canned one. Pineapple combines in this recipe with coconut for a delicate and yummy taste.

Ingredients
- 4 eggs
- 220 of sugar
- 100 g of butter
- 125 ml yogurt with coconut flavor
- 60 g coconut flour
- 350 g of flour
- 1 package of baking powder
- 500 g clean fresh pineapple
- a little salt
Directions
- In a large glass bowl, beat with an electric egg beater, eggs with the sugar, and a pinch of salt until fluffy.
- Add the yogurt. I used coconut-flavored yogurt, but you can also use natural or pineapple-flavored yogurt.
- Continue mixing and add the softened butter at room temperature. You can replace the butter with 120 ml of vegetable oil if you do not want to use butter.
- Add the coconut flour and the flour mixed with the baking powder. Continue mixing with the electric beater until the dough is ready.
- In the end, we will throw the pineapple cut into small cubes. You can also use canned pineapple.
- Put it in a 24 cm of diameter greased and flourish baking cake pan. Transfer it to the 180 degrees preheated oven, and cook it for 50 minutes.
- In the end, we will do the test with toothpicks, and it should come out dry. Leave it for 5 minutes with the oven off and take it out to cool. Remove from the pan and dust with powdered sugar.
- Once it cooled, cut it into slices. You serve it as desired, accompanied by your favorite ice cream.

My family would surely enjoy this cake. They are always looking for something new to snack on or to have for dessert. I think that I would use fresh pineapple in my recipe and I am not sure if your amount of sugar might be too sweet or just right. In our home we hardly eat much sugar. I am going to have to do some conversion of these ‘gms’ and ‘ml’ and workout how much is a package. It’s just that I am of the old school where I use teaspoons and oz.
