This Chicken Breast Stew Recipe is tasty, plained of flavors for a second plate for lunch in the family or with friends. It is a tasty combination of chicken breast, with onion, tomatoes, and seasoned with a variety of herbs for a particular and delicious recipe. We serve it with semolina, which combines well as a side dish for this recipe. The chicken breast will be soft and marinate with our favorite herbs.

Ingredients- 4 Servings
- 1-chicken breast
- 400 g ripe peeled tomatoes
- 1-onion
- 3-4 garlic cloves
- 2 tbsp flour
- ½ glass of white wine
- 2-3 tbsp olive oil
- 2 tbsp of butter
- salt, pepper, Laurel, Rosemary, Thyme, Oregano, Majorana, fresh parsley.
Directions
- We cut the chicken breast into slices, beat a little with a meat beater, and flourish both sides with flour.
- In a pan, we add oil and butter, and after it gets hot, we add the finely chopped onion and garlic.
- We put tomatoes in hot water, and after a few minutes, we peel them and dice them into medium pieces.
- When the onion tender, we add the chicken breast slices and stir-fry for about 2-3 minutes by each side until the chicken changes color. Add the wine and let to evaporate the alcohol at a high temperature.
- Add salt and pepper and herbs, and let season for 1-2 minutes, add the diced tomatoes, salt, pepper, laurel, oregano, and let them cook in medium heat, in their liquid, covered with a lid. We cook it until tomato to make a sauce, and the onion cooks well. We serve it warm with semolina.
- To prepare the semolina, I use the meat or bones broth, using one piece semolina and two bones broth, like we cook the rice. We rinse well the semolina, dry it, and stir-fry it with a little olive oil and butter and add the hot broth to cook for about 15-16 minutes until to absorb all the broth. Another way is to boil the broth and add the semolina and let it cook as above. Season it with salt, pepper, olive oil, or butter.
