Chicken Asparagus Risotto Recipe is the first spring dish full of flavor and nutritional value. This recipe is simple to prepare.

  • 350 g of Arborio rice
  • 1 bunch of asparagus
  • 100 g of chicken fillet
  • 1/2 glass of white wine
  • 1 green onion
  • salt, pepper, parsley
  • 2 tbsp of ground Parmegiano cheese
  • 1 tbsp of fresh butter
  • 1,5 liter of vegetable stock

For the risotto broth

  • 1 onion
  • 1 carrot
  • fresh parsley
  • salt
  • Parts of the ends of the asparagus

Directions

  1. We will clean the fresh asparagus. After that, we split the soft part of the asparagus from the strong one. For this, incline the asparagus lightly, and the place it will break itself is the right place.
  2. Continue to prepare the vegetable stock. We will use the ends parts of the asparagus together with the carrot, onion, celery, salt, and parsley to make it.

  4. We start by cooking the risotto. In a pan, sauté the minced onion and the chicken fillet cut into pieces.

  5. Continue cooking, adding after a few minutes the asparagus cut into small pieces.
  6. We leave the asparagus peaks as they are.

  8. Mix it well for two minutes and quench it with white wine. Raise the cooking temperature until the alcohol evaporates and add the hot liquid piece by piece, covering the rice.

  9. Once the rice absorbs the first liquid, add the hot liquid again. We continue like this until the risotto cooks.

  11. Serve it immediately warm with fresh parsley on top.

  2. This chicken and asparagus risotto looks very yummy and easy to prepare. I can see from your instructions that I am often too impatient when I cook risotto, and add all the liquid at the same time. And then when it doesn’t absorb it quickly enough, I stir it too much and then it becomes a sticky mess. 

    I love the combination of chicken and asparagus, and will try it with the wild asparagus that we have growing on our property, and using your directions..
