This Chicken And Pasta Broth is a soup recipe that you can serve for all the family. Quick and Easy, in a few minutes, a tasty meal for your toddler. The combination of poultry, cauliflower, and pasta makes it a healthy nutritional dish.
Ingredients 4-6 Servings
- 350 g boneless chicken breast
- 2 tbsp olive oil
- 1-medium onion
- 250g carrot
- 250 g cauliflower
- 850 g chicken stock
- 125 g small pasta shapes
- salt, pepper
- 2-tbsp fry or fresh mixed chopped herbs
- Parmesan Cheese (optional) and Crusty bread to serve
Directions
Helping by a sharp knife, finely cut and dice the chicken breast, discarding any skin.
Continue to dice the onion, carrot, and cauliflower.
In a large saucepan, heat the oil and stir-fry the chicken and vegetables until lightly colored.
Add the stock and herbs, bring to the boil and add the pasta shapes. Cover and simmer for 10 minutes stirring every 2-3 minutes to prevent the pasta from sticking together.
Taste with salt and pepper, and Parmesan cheese if you prefer.
Serve the soup warm with the crusty bread.
Tips
To encourage your toddler to eat this soup and make the eating more fun, you can use animal or alphabet pasta shapes.
The broccoli florets can be a replacement for the cauliflowers.
