Salmon is one of the fishes that we mostly prefer to eat during the fall and winter for the high nutrition values that it offers and for the various cooking recipes that we can prepare with it combining with season vegetables. Today, we want to share with you our Best Oven Baked Salmon Recipe, a high nutritional and healthy recipe, and very simple to prepare. Salmon can cook in a grill, a pan, and the oven, marinated and season with spices and herbs to consume in few minutes.
When we combine it with various veggies, we will provide a delicious healthy second plate, very tasty to eat by everyone, even from the kids. As we have highlighted in our salmon recipes, it is one of the riched food in Omega 3 and Vitamin D, and we must eat this healthy food during the cold seasons, and combining with veggies, we make it a completed dish for our main meal.
Ingredients – 2 Servings
- 300 g fresh salmon
- 1-potato
- 1- carrot
- 3-4 cherry tomatoes
- 1- zucchini
- olive oil
- salt, pepper
- lemon
- fresh parsley
Directions
- We preheat the oven to 200 degrees.
- We cut the cleaned salmon into pieces and marinate each of them with salt, pepper, olive oil, and lemon juice.
- We peel the veggies and cut them into small dices.
- We cut the cherry tomatoes in half and marinate all veggies with salt, pepper, olive oil.
- We put them in a ceramic or glass baking dish and transfer to the preheated oven to bake them for 40-45 minutes.
- Passing the first 20 minutes, we add the salmon pieces to the same baking dish with veggies and continue to bake for the other 20-25 minutes.
In total, this recipe needs 40-45 minutes. You will see for yourself that the vegetables will turn out soft and the fish soft and juicy. Serve it warm, and season the serving plate with finely chopped fresh parsley and lemon juice.
